Hearty Arugula Salad
2 cups fresh Arugula leaves
2 cups spring mix salad or baby spinach leaves
1/2 cup walnut pieces2 tsp chia seeds
1/2 cup each yellow, red & orange sweet peppers
1/2 cup cherry tomatoesDressing: pink salt to tasteblack pepper to taste
1/4 tsp dry basil leaves
1/8 cup apple cider vinegar with mother
1/8 cup of flax seed oil1/8 cup of extra virgin olive oil
Mix the arugula leaves and spring mix together in a big open salad bowl. Mix the dressings ingredients and set aside. Drop walnuts and chia seeds into the salad along with peppers and cherry tomatoes. Toss with the dressing and mix well. Great on its own or part of a summer menu! Benefits:
